A characterful, aromatic Malvasia creation: Michelangelo da Caravaggio Bianco from Emilia Romagna . Impressively intense bouquet with notes of white blossoms, flowers and exotic fruits. Wonderfully soft and round, lovely melting and a slight, barely perceptible acidity. A perfect Bianco to accompany numerous starters, vegetable dishes, fish and poultry. Cultivation:
The winery's own vineyard facing south and southeast.
Training system: Guyot with 4500 vines/ha. Yield 7500 kg/ha.
Soil:
Red clay of ancient origin with deposits of iron and other mineral elements.
Grape variety:
Malvasia di Candia Aromatica.
Production method:
Malvasia grapes are harvested by hand in boxes. Approximately 20% of the grapes are harvested later to obtain a higher concentration of sugar and aroma. Gentle pressing, static clarification of the must and slow fermentation for 30 days at a controlled temperature of around 16 °C. The part of the white wine harvested later matures for 12 months in French oak barriques, the rest in steel tanks.

Light straw yellow.

Fine, elegant and aromatic. With hints of white flowers, exotic fruits and white pulp.
Taste:
Structured and complex, paired with a very special minerality. The characteristic residual sugar ensures a pleasant drinking experience.
Storage:
The Michelangelo da Caravaggio Bianco IGT can mature for 2-3 years after the harvest.
